Pepsi Cake with icing

1 cup flour
1 cup sugar
1/2 cup butter
2 tbsp cocoa
6 ounces pepsi
1/2 tsp baking soda
1/4 tsp cinnamon
1/2 tsp vanilla
dash of salt
1 egg

preheat the oven to 350 degrees
Grease and lightly flour an 8 x 8 cake pan
in a large mixing bowl, stir together the flour and the sugar.
in a saucepan, melt the butter.
Then add the pepsi and the cocoa
Bring to a boil
Add the pepsi mixture to the flour/sugar mixture.
With the electric mixer, beat until smooth and creamy.
Add the baking soda,cinnamon,vanilla,salt,and the egg to the above mixture
Mix just until blended
Pour into the prepared cake pan
Bake for about 25-30 minutes


Icing

Melt 1/4 cup butter ina sauspan
Take off heat and add 2 cups powdered sugar and 2 tbsp cocoa.
Stir in 2 to 3 tbsp. milk for the desired consistency
