banana coffee bread

1/2 cup shortening
1-cup sugar
2 eggs
3/4 cup mashed bananas
1-1/4 cups flour
1/2 tsp cinnamon
3/4 tsp baking soda
1/2 tsp salt

Preheat the oven to 350 degrees
Grease a 9 by 9 inch cake pan
Cream together the shortening and sugar until light and fluffy (about 3 to 4 minutes)
Add eggs, one at a time, beating well after each addition
Stir in mashed bananas
in a small bowl, stir together the flour, baking soda, cinnamon and salt.
Add the flour mixture to the banana mixture
mix well
pour into the prepared cake pan
bake for 30 35 minutes
serve warm
