Banana Nut muffins

1 1/2 c. all purpose flour
1/2 c. wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/4 tsp.nutmeg
2/3 c. coarsely chopped walnuts
1 lge. egg
3/4 c. brown sugar
1 1/2 c. mashed bananas
6 Tbsp. vegetable oil
1 tsp. vanilla

Preheat oven to 375 degrees. Grease a standard 12 cup muffin pan or line w/ paper cups. Whisk together all dry ingredients.Stir in chopped nuts.Whisk together in a separate bowl the egg, brown sugar, bananas,oil and vanilla. Add the flour mixture to banana mixture and mix with a few strokes just until the dry ingredients are moistened. Do not overmix; the batter should not be smooth.
Divide the batter among the muffun cups. Bake until a toothpick inserted in 1 or 2 of the muffins comes out clean- about 18 min.Let cool 2-3 min before removing from pan. Serve warm or cold. These freeze well. It's a great way to use bananas that may be overripe. Banans can also be frozen till needed, so there is no waste.
