Millionaire’s Pie
Pie crust, unbaked
3 eggs, lightly beaten
1 cup light corn syrup
1⁄3 cup sugar
1⁄3 cup packed brown sugar
1⁄3 cup butter, melted
1 teaspoon vanilla
1⁄4 teaspoon salt
1 cup semisweet chocolate pieces
1 cup flaked coconut
1 cup coarsely chopped walnuts or pecans
Fit pie crust into a 9-inch pie plate and make filling: In a medium bowl, combine the eggs, corn syrup, granulated sugar, brown sugar, butter, vanilla and salt. Layer chocolate pieces, coconut and walnuts in crust. Pour filling over mixture, spreading evenly. To prevent over-browning, cover the edge of the pie with foil. Bake at 350 degrees for 30 minutes. Remove foil; bake for 20-25 minutes more or until center appears set when you shake pie gently. Cool completely on a wire rack. Cover and store in refrigerator within 2 hours. If desired, serve with whipped cream and sprinkle with shaved chocolate.
