- 24 ounces cod fillets
- 2 tablespoons olive oil
- 3/4 cup seasoned bread crumbs
- 1/4 cup chopped fresh parsley
- 3 tablespoons lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon dried oregano
Preheat the oven to 425 degrees F. Lightly grease a baking sheet. Place the cod fillets on the baking sheet. In a bowl, combine the oil, bread crumbs, parsley, lemon juice, garlic, salt and oregano. Mix well until everything is combined. Spread the crumb mixture evenly on the top of the fish fillets. Place the baking sheet in the oven and bake at 425 degrees F for 10 minutes or until the fish flakes easily and the breadcrumbs are lightly browned. Remove from the oven and serve immediately.
