RHONDA'S CHOCOLATE COVERED CHERRIES
Category: cookies, bars, candies, etc.
2 (10 OZ) jars Maraschino cherries with stems (need 50 pieces)
3 Tablespoons butter
3 Tablespoons light corn syrup
1/2 teaspoon almond extract
1/4 teaspoon salt
2 cups powdered sugar
1 (12 oz) package semi-sweet choc. chips
1 Tablespoon shortening
Drain cherries. Pat dry and set aside.
Mix butter, syrup and salt until well combined.
Shape 1/2 teaspoon sugar mixture around each cherry. Cherries must be dry for mixture to stick.
Place on waxed-paper lined pan and place in freezer until firm. (Once firm, you can place in a bag and freeze for dipping later.)
Melt chocolate chips & shortening in glass heat proof bowl, stirring often so chocolate doesn't burn.
Dip each cherry in chocolate and place on wax-paper lined pan. A carving fork works great for dipping.
Store in regrigerator.
