ROASTED CORNISH HEN

Cornish Hen
Butter
Seedless grapes
Bacon slices
Sherry

Rub hen with butter; sprinkle with salt. Stuff hen with seedless grapes. Lay bacon across the breast of hen. Roast, uncovered, in a very hot 500 degree oven for 15 minutes. Baste often. When browned, reduce heat to 350 degrees and cook for 45 minutes basting every 15 minutes. Pour a wineglass of sherry over hen. Add an additional handful of grapes to pan and cook an additional 10 minutes.
