HUMMINGBIRD CAKE

3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 eggs, beaten
1 1/2 cups cooking oil
1 1/2 teaspoons vanilla extract
1 (8 ounce) can crushed pineapple (do not drain)
2 cups chopped pecans
2 cups mashed bananas

Blend together dry ingedients.Add eggs and oil. Fold in vanilla, pinapple and juice, nuts and bananas. Pour into 3 prepared 9 inch cake pans for 25-30 minutes. Frost with Cream Cheese frosting.

CREAM CHEESE FROSTING

2 (8 ounces) cream cheese, softened
1 cup margerine
2 (16) ounces powdered sugar
2 teaspoons vanilla

Combine cream cheese and margerine. Blend in sugar and vanilla and frost cooled cake.
