STUFFED FLOUNDER

flounder fillets (10 or 12 any even number)
4 Tablespoons melted
3 Tablespoons lemon juice
3 Tablespoons chopped parsley
Mix the melted butter, parsley and lemon juice to use as a dressing for the flounder fillets after cooking.
Place one half of the flounder filets on the bottom of a baking dish. Pile crab meat stuffing on top of each fillet and add a fillet on top. Then spoon a quanity of stuffing on top of fillets.
Make a slit in the top fillet, making sure to cut through the bottom fillet. Bake in a 350 degree oven for about 25 minutes. Check for doneness. Stuffing should be hot all the way through and fish should flake and be opaque, but still be moist.
Drizzle the parsley and butter mixture juice over top.
CRAB MEAT STUFFING
1 pound crab meat
1 tsp dry mustard
2 tablespoons chopped parsley
2 cups crush crackers (saltines)
1/2 cup finely chopped onions
1 tablespoon chopped green pepper
1/2 teaspoon oregano
mayonnaise to blend
