FEUD CAKE

8 eggs
2 cups sugar
1 cup all purpose flour
1 teaspoon salt
4 teaspoons baking powder
1 Tablespoon vanilla
5 1/4 cups pecans, finely chopped

Beat eggs at high speed for 5 minutes. Gradually add sugar and vanilla. Sift dry ingredients together and add to egg mixture. Beat another 5 minutes. Add 5 cups pecans at low speed to moisten well and beat for approximately 1 minute. Pour mixture into 3 greased and paper lined 9" cake pans. Bake at 350 degrees for 15 to 20 minutes. Remove immediately from pans to wire cake racks and cool. Cake may fall slightly (its normal).

feud cake topping:
1 1/2 quarts whipping cream
1 cup confectioners' sugar

Whip cream until stiff and sweeten with sugar. Frost layers and sides of cake. Sprinkle generously with chopped pecans.
