MOM'S LEMON CHEESE CAKE

2 1/2 cups cake flour
1/8 teaspoon salt
2 1/2 teaspoons baking powder
1 cup butter
2 cups sugar
1 cup milk
5 egg whites, stiffly beaten
1 teaspoon vanilla

Sift together, baking powder, and flour. Cream butter and sugar until fluffy. Add flour and milk alternately, beginning and ending with flour. Beat slowly until flour is just added in. Fold egg whites into batter. Add vanilla. Pour into 3 8" prepared cake pans and bake at 350 degrees for 35 minutes.

FILLING
1/2 cup butter
1 1/2 cups sugar
5 egg yolks
2 lemons, juice and grated rind

Cream butter and sugar until fluffy. Add egg yolks and beat well. Add lemon juice and rind. Cook over boiling water until thickened (stir occassionally). Filling begins to cling to side of pot when done. Cool and spread on cooled cake.
