FRESH APPLE CAKE

2 eggs
2 cups sugar
2 1/2 cups self-rising flour
1 cup oil
1 teaspoon vanilla
1 cup pecans, chopped
3 apples, chopped

Mix in the following order: eggs, sugar, flour, and oil. Add vanilla, nuts and apples. Mix well. Place in a tube or bundt pan. Bake at 350 degrees for one hour.

ICING
1 stick butter
1 cup light brown sugar
1/2 cup evaporated milk
1 teaspoon vanilla

Melt butter over low heat. Add sugar, milk and vanilla. Bring to a full boil and boil for 1 minute. Remove from heat and cool. Pour over hot cake.
