Spicy Sausage Stuffed Portobellos

8 oz. turkey sausage, fresh
4 large Portobello mushroom caps
1 Tbsp olive oil
1/3 cup yellow onion, chopped
1/3 cup green pepper, chopped
1/2 tsp oregano
1/8 tsp black pepper
1/4 cup low-fat cream cheese
1/8 cup Parmesan Cheese, shredded
Preheat oven to 350 degrees.
Brown sausage in a skillet over medium heat.
While sausage is cooking, clean the mushrooms. You may need to scrape out some of the insides to have enough room for the stuffing.
Add onion, green peppers, oregano and black pepper to skillet. Cook until vegetables are tender.
Add cream cheese to skillet and mix well.
Lightly brush mushroom caps with olive oil, then fill with sausage stuffing.
Place mushrooms in baking dish and add just enough water to cover the bottom of the pan.
Bake for 10-15 minutes or until mushrooms are tender.
Remove from the oven and top with Parmesan cheese.
Return to oven for 5 minutes or until cheese is melted and golden brown.
Serve immediately.
