Pork Kapusta (SF champion)

Category: German Pork Chops/Pork Entrees

3 pounds pork loin, boneless

3 cloves garlic, halved lengthwise

Salt and pepper

1 tablespoon caraway seeds

3/4 pound bacon

4 cups green cabbage, shredded

1 1/2 cups sauerkraut

28-ounce can petite diced tomatoes

2 bay leaves

12 ounces German beer


Place 6 small slits into pork loin and insert halved garlic into slits. Season pork with salt and pepper, to taste. Place all ingredients in large pot and cook, covered, over medium-high heat for 1 hour and 45 minutes. Stir often to prevent pork from burning. When ready to serve, remove bay leaves and shred the pork.

Makes 6 to 8 servings.
