Scarsdale Salad with Raspberry-Almond Vinaigrette (Robbie's)

SALAD:
fresh spinach leaves
tomato wedges
fresh button mushrooms, sliced
hard-cooked eggs, sliced
cheddar and monterey jack cheese, grates
roast beef, sliced
turkey breast, sliced

Vinaigrette:

17 ounces raspberry-flavored red wine vinegar
1 Tbsp tarragon, either dried or fresh
1 Tbsp almond extract
1 Tbsp raspberry jam
3 cups vegetable oil

Mix salad ingredients; Toss dressing ingredients.

makes 5 cups dressing, enough for 20-24 salads
