Sherry Wine Vinaigrette Salad Dressing

1/2 cup olive oil
1/2 cup salad oil
1/4 cup sherry or white wine vinegar
1 finely chopped shallot
1 tsp coarse (kosher) salt
1/4 tsp pepper
1 Tbsp snipped fresh taragon (or 1 tsp dried)
1 Tbsp finely chopped fresh chives

Combine all ingredients in a screw-top jar; cover and shake well. Serve immediately or store, covered, in the refrigerator for up to 1 week. Shake before serving.
