4 6-8-oz fresh or frozen salmon steaks, cut
1-in thick
3/4 cup bourbon whiskey
1/2 cup packed brown sugar
2 Tbsp honey
2 tsp soy sauce
1/2 tsp ground ginger
1/4 tsp pepper
cooking spray

Thaw salmon, if frozen. Rinse the fish and pat dry. Place in a plastic bag set in a shallow baking dish.
In a small bowl, stir together the bourdon, brown sugar, honey, soy sauce, ginger and pepper. Pour over fish in the bag. Close bag. Marinate fish in refrigerator 1 hour, turning occasionally to distribute marinade.
Drain fish, reserving marinade. Lightly brush grill rack with cooking spray. Place fish on the rack of an uncovered grill directly above medium coals. Grill 8-12 minutes or till fish begins to flake easily with a fork, turning once. Brush once with the reserve marinade halfway through the grilling time. Discard the remaining marinade.
