Greek Potato Salad

3 potatoes
1 lg. onion, chopped
1 Tbs. chopped parsley
salt, to taste
pepper, to taste
1/3 C. olive oil
juice of 1 lemon
oregano
Directions

Boil potatoes until almost tender. Drain. Slice. Place in large bowl. Add onion, parsley, olive oil and lemon juice. Sprinkle with oregano, salt and pepper. Toss lightly. May be garnished with Greek olives or parsley
Serves 2.
