Honey Mustard Chicken

2 whole chicken breasts, skinned, boned, halved, and flattened
2 tsp. honey
3 tsp. whole grain mustard
2 garlic cloves, chopped
sprig fresh parsley
1/2 C. flavored bread crumbs
2 tsp. olive oil
2 tsp. butter

Directions
In a flat dish, press bread crumbs into chicken on all sides. In a bowl, mix together chopped garlic, mustard, honey, and chopped parsley. Oil an oven-proof casserole dish. Lay chicken in casserole dish. Spoon and spread the mustard mixture on breaded chicken. Bake in a preheated 400-degree oven for 15 minutes. Remove to heated plates and spoon any remaining juices onto chicken.
