Scallops with Greek Feta Cheese

Ingredients
1 lb. bay scallops
vegetable oil spray
1 14-1/2-oz. can pasta-style Italian-style tomatoes
1/8 tsp. black pepper
1/2 C. Greek feta cheese

Directions

Rinse the scallops and pat dry. Set aside. Spray a large skillet with evegetable oil. Place over medium-high heat. Add scallops to hot skillet and cook about 3-5 minutes or until scallops are opaque, stirring often. Add the undrained tomatoes and pepper to the skillet. Heat through, about5 minutes or so. Spoon the mixture evenly onto 4 plates. Sprinkle each serving with crumbled feta cheese.

Serve with: Rice and Lentil Pilaf


Serves 4.
