Citrus Salad with Honey-Lime Dressing

1/4 cup honey
2 Tbsp fresh lime juice
1/2 tsp grated lime zest
3 pink grapefruits
3 navel oranges
3 Tbsp small mint leaves or chopped mint

In a large bowl, whisk the honey, lime juice and zest.
Cut peel and white pith from grapefruits and oranges. Slice the fruite into rounds, add to the bowl and gently toss to combine. Sprinkle with the mint before serving.

Serves 8.
