Fancy Carrot Salad

Ingredients
6 medium carrots (about 1 pound), shredded
1/2 cup raisins
3/4 cup mayonnaise
2 tablespoons honey
1 teaspoon vanilla extract
6 romaine lettuce leaves

Instructions
In a large bowl, combine all the ingredients except the lettuce; mix well.

Place the lettuce on a platter and spoon the carrot mixture over the top. Serve immediately, or chill until ready to serve.
Serves 6.
