Fresh Kraut

2 tsp mustard seeds
4 cups shredded and coarsely chopped green
cabbage (cut pieces bite-size)
1/4 cup white wine vinegar
4 garlic cloves, minced
1 tsp sugar
1/2 tsp salt
In a small skillet or saucepan toast the mustard seeds over medium-low heat, stirring constantly, for 2 minutes or until fragrant. In a large bowl combine shredded cabbage, white wine vinegar, garlic, sugar, salt and toasted mustard seeds. Cover and chill in the refrigerator 2-24 hrs.
makes about 2.5 cups
