Braised Tarragon Carrots

Category: Vegetable

2 lb baby-cut carrots,halved lengthwise if large
6 Tbsp reduced sodium chicken broth
1/4 cup unsalted butter
1/4 cup chopped fresh tarragon
2 Tbsp chopped fresh chives
3/4 tsp salt
1/4 tsp freshly ground pepper

Place carrots, broth and butter in medium saucepan. Cover and bring to a boil over medium heat. Reduce heat to medium-low; simmer 12-15 minutes or until carrots are just tender.
Stir in all remaining ingredients; cover and cook 1 minute.

8 (3/4 cup) servings
