Cranberry Vinaigrette

1/4 cup thawed frozen cranberry juice
concentrate
3 Tbsp red wine vinegar
2 tsp Dijon mustard
1/2 tsp salt
1/2 tsp freshly ground black pepper
5 Tbsp walnut oil

In small bowl, whisk together all ingredients except oil. Slowly whish in oil. Let stand at room temperature at least 15 minutes or refrigerate at least 24 hrs; bring to room temperature before using.
