German Oven Potatoes

Ingredients
8 mid-sized potatoes
7 oz. boiled ham
1 red sweet pepper
1 3/4 C. grated cheese
3 eggs
3/4 C. sour cream
3/4 C. heavy cream
1/4 C. grated Parmesan cheese
3 Tbs. finely chopped chives or dill
1 tsp. paprika
1/2 tsp. salt
Dash pepper
Directions
Peel the potatoes and cut in thin wedges. Dice ham and red pepper. Alternate potatoes, ham, pepper, and grated cheese in a buttered, oven-proof dish. Mix eggs, sour cream, whipping cream, Parmesan cheese, and chives. Flavor with powdered paprika, salt, and pepper. Pour the mixture on top of the potatoes and bake in the middle of the oven at 400 degrees for 40 - 50 minutes or until set.
Makes 4 servings.
