Slow Cooker White Chili
Category: Chilis
Ingredients
4 chicken breasts, cut into cubes
1 med. onion, chopped
1 15-oz. can green chilies, drained
2-4 chipotle peppers
2 15-oz. cans Great Northern beans, drained and rinsed
2 15-oz. cans navy beans, drained and rinsed
2 15-oz. cans cannellini beans (white kidney beans), drained and rinsed
1 15-oz. can yellow corn, drained
1 16-oz. pkg. frozen white corn
1/4 C. cumin powder
1 Tbs. coriander powder
1 tsp. curry powder
1-2 C. chicken broth
garlic, salt and pepper to taste
For serving:
tortilla chips
shredded cheese of your choice
Directions
Add entire list of ingredients (minus the corn) into your crock pot and turn it on LOW. Be sure to stir the pot every so often. About 1 hour before you serve, add all of the corn and mix well.
Sprinkle shredded cheese (Mexican style is our favorite) over the top and dip with tortilla chips
