Fire and Ice Tomatoes

6 medium tomatoes, peeled and quartered
1 medium onion, sliced
1 medium green bell pepper, cut into strips
1/4 cup water
1 tablespoon plus 2 teaspoons granulated
sugar
1 1/2 teaspoon celery salt
1 1/2 teaspoon mustard seeds
1 large cucumber, peeled and sliced
3/4 cup cider vinegar
1/4 teaspoon salt
1/2 teaspoon cayenne pepper
1/8 teaspoon black pepper
In a large bowl, combine tomatoes, onion, green pepper and cucumber.
In a small saucepan, combine vinegar, water, sugar, celery salt, mustard seeds, salt, cayenne pepper and black pepper. Bring to a boil over medium-high heat; boil 1 minute. Pour hot vinegar mixture over tomato mixture. Cover and refrigerate 8 hours or overnight, to let flavors blend. Serve with a slotted spoon.
