Broccoli Stir-Fry Slaw

2 bunches fresh broccoli (about 2 pounds)
2 tablespoons vegetable oil
4 green onions, cut into 1-inch pieces
1 red bell pepper, cut into julienne strips
1 cup sliced fresh mushrooms
2 tablespoons white wine vinegar
2 tablespoons balsamic vinegar
2 tablespoons reduced-sodium soy sauce
1 teaspoon celery seeds
1 cup water

Trim broccoli florets; set aside. Peel broccoli stems; slice diagonally into 1/2-inch pieces. Heat oil in wok or heavy skillet. Add broccoli slices, green onions, bell pepper and mushrooms. Stir fry about 3 minutes. Remove wok from heat. Add white wine vinegar, balsamic vinegar, soy sauce and celery seeds. Toss, then transfer mixture to a serving dish.
Add water to wok; heat to boiling. Add reserved broccoli florets; cook 2 to 3 minutes. Drain florets well, then arrange on top of cooked vegetable mixture. Serve hot or at room temperature.
