Fresh Apple Cake

1 cup chopped nuts (black walnuts are best)
3 cups sifted flour
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 1/3 cups salad oil
2 cups sugar
2 eggs, beaten
1 teaspoon vanilla
3 cups chopped apples

Dredge nuts in 1/2 cup flour. Sift together remaining flour, cinnamon, salt and baking soda.
Cream oil and sugar; add beaten eggs and vanilla. Stirin flour mixture. Fold im apples and nuts.
Pour batter into greased and floured 13x9-inch or tube pan. Bake at 300 degrees for 1 hour (or longer). Test for doneness. Batter will be very thick.

makes 8 to 10 servings
