2 Vidalia onions, diced
1 1/2 pounds mushrooms
2 teaspoons clarified butter
1/2 teaspoons salt
1/4 teaspoon fresh pepper
Nutmeg
3 eggs
2 cups cream
1 (10-inch) tart shell
Dijon mustard

Instructions:

Saute onions and mushrooms in 2 teaspoons clarified butter. Season with salt, pepper and a pinch of nutmeg. Mix eggs until lightly beaten. Mix in cream and strain.

When mushroom mix has cooled, place in tart shell that has been brushed with Dijon mustard. Bake 30 minutes at 375 degrees in bottom third of oven. Let cool 5 minutes before serving.
