Korean Grilled Steak

3/4 lb skirt steak or other quick cooking cut
1/4 cup low-sodium soy sauce
3/4 cup white vinegar
2 tsp minced garlic
2 tsp Dijon mustard
2 tsp ground ginger
freshly ground black pepper
Remove visible fat from steak. Place steak in a plastic bag. Add soy sauce, vinegar, garlic, and a dash of pepper. Seal the bag and gently shake to combine ingredients. Marinate up to several hours.
Remove steak and pour marinade into a saucepan. Grill steak 3 to 4 inches from heat source for 5 minutes. Turn and grill 2 minutes.
White steak cooks, boil marinade until it thickens, about 2 minutes. Slice steak against the grain and spoon 2 Tbsp sauce over the top.
