Leland Hotel Chefs Welsh Rarebit Sauce for Horseshoes

1/2 pound butter
1/2 pound flour (2 cups)
1 quart milk
1 tablespoon salt
1 tablespoon Worcestershire sauce
1/8 teaspoon cayenne pepper
1/8 teaspoon dry mustard
1 pound Kraft Old English or American cream cheese, chopped up
1 pint beer

Instructions:

Melt butter; add flour and whip until smooth. Add rest of ingredients. Cook in double boiler until smooth. Add beer just before serving.

Note: Most recipes suggest heating the milk to scalding before adding to butter and flour.

Serves 12.
