Tomatoes Caprese

1 (12 oz) bottle balsamic vinegar
1 red tomato, cut into 1/4-in-thick slices
1 yellow tomato, cut into 1/4-in-thick slices
1 orange tomato, cut into 1/4-in-thick slices
1 green tomato, cut into 1/4-in-thick slices
1 (8 oz) package whole milk mozzarella, cut
into 1/4-in-thick slices
1/2 tsp kosher salt
1/2 tsp ground black pepper
3/4 cup thinly sliced fresh basil

In a medium saucepan, cook balsamic vinegar over medium heat, swirling pan occasionally, until vinegar is reduced to 1/2 cup, about 10 minutes. Remove from heat, and let cool.
Arrange tomatoes and mozzarella on a serving platter. Drizzle with reduced balsamic vinegar. Sprinkle evenly with salt and pepper. Top with basil just before serving.

makes 4 to 6 servings
