Shellys Roasted Chicken

3 3/4 lb whole chicken
3 garlic cloves, halved
1 lemon, sliced
2 sprigs each of rosemary, oregano and
basil
extra-virgin olive oil
salt and pepper

Stuff the chicken with the garlic, lemon, and the herbs. Truss the chicken, rub with the olive oil, season with salt and pepper and roast in a 350 degree oven for 20 minutes. Lightly baste with olive oil and roast for 1 hour longer, until cooked through. Let rest for 10 minutes before carving.
