Sun-Dried Tomato-Caper Mayonnaise

Flavored mayonnaises come together quickly and can be used as sauces for fish or chicken, spreads for sandwiches, or cooling dips for our Crispy Sweet Potato Fries (see related recipe). Can be refrigerated for up to 4 days.

Makes about 1 cup.
1 cup mayonnaise
3 tablespoons minced sun-dried tomatoes (oil-packed), patted dry with paper towels
1 tablespoon chopped capers
1 garlic clove , minced
Salt


Whisk mayonnaise, sun-dried tomatoes, chopped capers, and minced garlic in small bowl. Season with salt and refrigerate for 30 minutes.
