Oriental Cabbage Slaw

1 medium cucumber, halved lengthwise and
thinly sliced
1 cup fresh pea pods, halved
1/4 cup rice vinegar
1 Tbsp olive oil
2 tsp toasted sesame oil
1/2 tsp sugar
1/8 tsp salt
1/2 tsp red chili paste (optional)
4 cups shredded napa cabbage
1/2 cups coarsely chopped honey-roasted
peanuts
In a large mixing bowl combine cucumber and pea pods. For dressing, in a small mixing bowl stir together vinegar, olive oil, sesame oil, sugar, salt and red chili paste, if desired. Pour over cucumber and pea pods, stirring to coat. Cover and chill for 4-24 hours. Just before serving, stir in cabbage and peanuts.
