Zucchini Bread - Ellen S

4 eggs
2 1/2 cups sugar
1 cup vegetable oil
3 1/2 cups all purpose flour
1 1/2 tsp baking sida
1 1/2 tsp salt
1/2 tsp baking powder
2 tsp cinnamon
2 tsp nutmeg
2 cups firmly packed (peeled and grated)
zucchini
1 cup chopped walnuts (optional)
2 tsp vanilla

combine all dry ingredients and set aside
beat eggs; then add sugar, oil and vanilla
add dry ingredients to egg mixture, alternating with grated zucchini
add nuts
spoon into two 9"x5" (greased and floured)
loaf pans
bake at 350 degrees on lowest oven rack for
55 minutes to one hour and 10 minutes or until toothpick tests clean
cool 10 minutes before removing from pans

makes 2 loafs
