Vinaigrette & Apple Slaw

2 Tbsp ground cumin
2 limes
2 Tbsp honey
1 Tbsp finely chopped fresh oregano
1 Tbsp Dijon mustard
1 garlic clove, pressed
1/2 tsp salt
1/2 cup olive oil
4 oz shredded cabbage
2 stalks celery, peeled
1 medium gala apple
For vinaigrette, place cumin in saute pan. Cook over medium heat 1-2 minutes or until fragrant, stirring constantly. Juice limes to measure 5 Tbsp juice. Combine cumin, juice, honey, oregano, mustard, pressed garlic and salt in small bowl; whisk until smooth. Slowly add oil, whisking constantly; set aside.
Thinly slice celery on bias. Cut apple into small pieces. Place cabbage, celery, apple and half of the vinaigrette in large bowl; toss to coat.
Use remaining vinaigrette to serve with grilled pork chops ( chops have been coated with salt, pepper and cumin prior to grilling).
