Marinated Peppers

Category: Appetizers served hot/warm

2 red bell peppers
2 green bell peppers
2 yellow peppers
3 garlic gloves, sliced
2 Tbsp balsamic vinegar
1/2 cup olive oil
8 slices toasted bread
1 tsp chopped fresh basil
1 tsp chopped fresh parsley
salt and pepper, as needed

Wash the peppers and roast them whole in a 450 degree oven for 10-15 minutes or until the skin blisters and blackens. Imediately transfer to a holding pan and cover tightly. Let cool. When cool, peel, core and remove seeds from peppers. Cut peppers into lengthwise strips. Mix remaining ingredients in a large bowl and add peppers, combining well. Let marinate for one hour. Serve with toasted bread.

Serves 8
Goes very well with the Asiago Baguette from Panera Bread (St Louis Bread Co)
