Carolina Pulled Pork Sandwiches

1 onion, chopped (1 cup)
2 cloves garlic, chopped
4 lbs boneless pork butt shoulder roast
1 Tbsp dry fajita seasoning
2/3 cup catsup
1/3 cup packed dark brown sugar
1/3 cup cornstarch
3 Tbsp apple cider vinegar
1 tsp salt
12 buns, split
2 cups prepared coleslaw

Place onion and garlic in bottom of 3-qt slow cooker. Top with pork; sprinkle with seasoning.
In small bowl, whisk together catsup, brown sugar, cornstarch, vinegar and salt until smooth. Pour over pork. Cover; cook 10-12 hours on low.
Transfer pork to plate, reserving sauce in slow cooker; cool slightly. Using two forks, shred porl into bite-sized pieces; stir back into sauce. Fill buns with pork mixture, dividing evenly; top with coleslaw.
