2 1/2 cups cornflakes
2 1/2 tsp house seasoning
1/2 cup buttermilk
four 8-ounce boneless, skinless chicken
breast halves
1/2 cup plain low-fat yogurt
2 Tbsp honey
Preheat the oven to 350 degrees F. Spray a baking sheet with nonstick cooking spray. Put the cornflakes in a gallon-size heavy-duty plastic bag and crush them. Add 2 tsps of the house seasoning, shake to combine, and pour onto a plate. Pour the buttermilk into a shallow bowl.
Pat the chicken dry and sprinkle it with the remaining 1/2 tsp seasoning. Dip each breast into the buttermilk and then into the crushed cornflakes, pressing the flakes to help them adhere. Transfer the chicken breasts to the prepared baking sheet and bake until golden and cooked through, 25 to 30 minutes.
While the chicken is baking, in a small bowl, mix together the yogurt and the honey. Serve the sauce alongside the chicken.
