White Chili

Category: Chilis

4-5 boneless skinless chicken breasts
3 cans navy beans (or great northern)
2 cans low sodium chicken broth
1 small can green chilis, chopped
1 medium onion, chopped
1 Tbsp cumin (or to taste)
1 Tbsp dried cilantro
2 Tbsp chili powder
1 can beer ( your selection)
corn starch (if necessary)
shredded cheese (optional)

Cut chicken into bite size pieces or smaller. Dice onion. Saute chicken and onions together until cooked through. Add chili powder and cilantro. Add mixture to chicken broth, green chilis, beans and cumin. Add beer. Season with salt and pepper. If needs to be thickened, add a corn starch mix. Heat to steam and then simmer for 30 minutes.

Serves 6.
I place in a crock pot at this time and keep on low until ready to serve.

Top with shredded cheese if desired.
