Rosemary-Garlic Chicken

1 5 1/2 lb whole chicken
1 1/2 tsp salt
1 tsp ground black pepper
20 whole garlic cloves, lightly crushed
1/2 lb sliced yellow onions
1 lb red potatoes, halved
1 Tbsp chopped oregano
1 tsp finely chopped rosemary
1 cup small green fresh olives, pitted
1/2 cup fresh lemon juice

Sprinkle the chicken skin and cavity with 1/2 tsp salt and 1/2 tsp pepper and place 10 garlic cloves inside. Layer the onions and potatoes along the bottom of a slow cooker and sprinkle with the remaining salt, pepper, half of the oregano, and half of the rosemary. Place the chicken, breast side down, on top of the potatoes and onions. Sprinkle with the remaining rosemary and oregano. Add the olives, remaining garlic cloves, and lemo juice. Cover and bake for 6 hours. Pull meat from the bones and serve ot with the broth and vegetables.

timesaver: no slow cooker? Substitute a cast-iron pot with a tight-fitting lid and bake at 350. You will reach the same pleasing results and have this hearty dinner to the table in 2 hours.
