Peppered Sage Popovers

1 Tbsp shortening or nonstick cooking spray
2 eggs, lightly beaten
1 cup milk
1 Tbsp olive oil
1 cu all-purpose flour
2 Tbsp grated parmesan cheese
2 tsp finely chopped fresh sage or thyme or 1/2 tsp dried sage or thyme, crushed
1/2 ts freshly ground pepper
1/2 tsp salt
Grease bottom and side of 6 cups of a popover pan with 1/2 ts shortening each or coat with cooking spray. (or use six 6-ounce custard cups placed in a baking pan.) In a mixing bowl, combine eggs, milk and oil. Add flour. Beat with a rotary beater or whisk until smooth. Stir in cheese, herb, epper and salt. Fill prepared cups half full. Bake in a 400 degree oven for about 40 minutes or until very firm.
Immediately remove popovers from the oven and prick each with a fork to let steam escape. (If crisper popovers are desired, after baking, prick the popovers, turn the oven off, and leave poovers in the oven for 5-10 minutes more or until of desired crispness.) Serve hot. makes 6
