When Whipping Cream:

One cup heavy or whipping cream yields 2 cups whipped. Whipping cream and heavy cream are the same. Do not confuse with hald-and-half, which can not be whipped.
Avoid overbeating, because you will turn the cream into butter. You can achieve a stiff peak, but don't take it past that point.
I use 1/4 cup sugar to 1 cup whipping cream in most all of my recipes. If this is too sweet for you, simply reduce the amount of sugar to suit your taste.
Try adding cocoa to whipping cream, with a litte extra sugar because chocolate is bitter. Simply add cocoa to the cream and beat as usual.
Be sure your bowl and beaters are well chilled and your cream is very cold.
