Honeyed Pork Tenderloin with Avocado-Peach Salsa

1/2 cup soy sauce
1 Tbsp sesame oil
2 tsp teriyaki sauce
2 garlic cloves, minced
1 tsp ground ginger
1 lb pork tenderloin
1/4 cup honey
2 Tbsp brown sugar
4 1/2 Tbsp sesame seeds
Avocado-Peach salsa
Combine first 5 ingredients in a large shallow dish or heavy-duty zip-top plastic bag; add pork. Cover or seal, and chill 6-8 hours.
Remove pork from marinade, discarding marinade.
Stir together honey and brown sugar. Brush pork with honey mixture, and sprinkle with sesame seeds. Place on a lightly greased rack in a roasting pan.
Bake at 400 degrees for 25-30 minutes or until meat thermometer inserted into thickest portion reaches 160 degrees. Cut pork into slices; serve with Avocado-Peach salsa.
makes 4 servings
Avocado-Peach Salsa
1 cup peeled, diced fresh peaches (about 2
small ripe peaches)
1 large tomato, diced and drained
1/2 cup diced avocado (about 1 small avocado)
1 Tbsp minced red onion
1 Tbsp lime juice
1 tsp olive oil
1/4 tsp salt
1/4 tsp ground red pepper
Combine all ingredients in large bowl; cover and chill until ready to use.
makes 2 3/4 cup
