Chocolate Caramel Chews

1 stick butter
1/3 cup sugar
1/3 cup brown sugar
1 egg yolk
1/2 tsp vanilla
1 ounce unsweetened chocolate, chopped
1 cup flour
1/2 cup mini chocolate chips
20-24 caramels, unwrapped
chocolate glaze

Beat together butter and sugars until light and fluffy. Beat in yolk and vanilla.
Melt chocolate in top of double boiler over simmering water or in the microwve on high for 1 minute. Stir into mixture. Stir in flour, then mini chips. Beat mixture until well-blended. Chill until cookie dough is stiff, 1 hour or more.
Preheat oven to 325 degrees. Round each caramel slightly by pressing the corners in. Wrap about 3 Tbsp of dough around each caramel, being sure to seal tightly. You should have enough dough to wrap about 20 caramels.
Bake for 20 minutes or until cookies feel dry to the touch. Do not overbake. Remove from oven and allow to cool completely.
When cookies are cool, drizzle with chocolate flaze. Allow to dry.
makes 20 cookies

GLAZE: in top of double boiler over simmering water, melt together 2 ounces semi-sweet chocolate, chopped and 1 Tbsp water. Stir until smooth. Cool slightly before using.
