Chef Linns Roasted Turkey

1 12-14 lb turkey
12 peeled cloves garlic
olive oil
salt
pepper
14 fresh basil leaves
8 pats butter
3/4 lb carrots, roughly cut
1 medium onion, roughly cut
4 stalks celery, cut in 2-inch chunks
1 (14.5-oz) can chicken broth
garlic powder
poultry seasoning

Rinse the thawed, cleaned turkey in cool water and pat dry. Take index finger and run along breast and thigh area under the skin.
Soak garlic cloves in olive oil, then coat with salt and pepper. Place cloves under the turkey skin on both sides near breast and thich. Place basil leaves and butter under the skin also.
In bottom of roasting pan, place carrots, onion and celery. Add broth. Brush turkey with olive oil and sprinkle with garlic powder, salt, pepper and poultry seasoning.
Cover with lid or foil. Place in preheated, 350 oven for 4 1/2-hours. Remove cover; lower temperature to 350 degrees and roast for an additional 2 hours.
Remove from oven and drain liquid. Cover and let turkey sit for 30 minutes before carving.
