Pecan Chewies

butter, softened, for pan
1 cup all-purpose flour, plus more for
dusting pan
4 large eggs
1 lb (2 1/4 cups) firmly pack light brown
sugar
1 tsp coarse salt
1 tsp pure vanilla extract
6 oz pecan halves
Heat oven to 325. Brush a 9x13-inch baking pan with butter, and dust with flour, tapping out excess; set aside.
In the bowl of electric mixer fitted with the paddle attachment, beat the eggs. Add sugar; beat to combine. Add flour, salt and vanilla; beat to combine.
Spread pecans in prepared baking pan in a single layer. Pour bater over pecans.
Bake until mixture is set and a shiny crust has formed, about 35 minutes. Remove from oven; let cool to room temperature before cutting into 1-inch squares. For the neatest squares, clean knife frequently. Remove squares from pan with a narrow spatula.
makes about 40 one-inch squares
